Ruby was born on August 26, 1928, in Waurika, OK, to Elmer Donald and Roxie Phoebe (Whitfield) Pickering. She grew up in an orphanage in Helena, OK, from 1930 to 1944, when she went to live with her sister, Vera in Fairview, Oklahoma. Ruby graduated from Fairview High School.
While living at the Helena Orphanage, Ruby began her relationship with Christ. Ruby said her greatest lesson was "To trust in God and to know that He always knows what's best for me and for me to accept it. I like to live by the Golden Rule and things aren't always what they seem to be, learn to forgive and forget". She also stated "the Bible has a big influence in my life for it is God's words and it comforts me in sad times. God cries for us all and He will always be there no matter what".
Ruby married Douglas Fairbanks Hensley on June 2, 1946, in Fairview, OK. They moved to Stillwater in 1952 and Ruby worked at Oklahoma State University for many years as a cook in the Child Development Center. She was a member of Sunnybrook Christian Church. Ruby was a softball and basketball player in high school. She said she "never missed a free throw". She continued to play softball after school. She enjoyed Oklahoma State University wrestling and was a season ticket holder for many years.
Ruby was preceded in death by her parents, husband Douglas Fairbanks Hensley, Daughter Claudia Lewallen, Great Grandson Clinton Ledbetter and brothers Vern, Troy and Floyd Pickering.
Ruby is survived by one son, Douglas Duane Hensley of Stillwater; four daughters, Kathy Dixon (Bob) of Midlothian, TX; Jeanne Wahpekeche (Alan) of Stillwater; Christy Higgins of Tulsa; and Kara Hemmle (Alan) of Midlothian, TX; 14 grandchildren; 17 great grandchildren; 3 great-great grandchildren; one sister, Vera Burrell of Fairview, OK; and one brother, Claude Pickering of Anaheim, California
